Onggi, the traditional Korean earthenware vessel, is central to our restaurant’s identity. At CHAE, we focus on crafting traditional condiments using timehonoured techniques, allowing flavours to develop naturally over years. These onggi are where all of our ferments are stored and aged for years before being used in our kitchen.
